Biltong Carbonara

Creamy, cheesy, delicious comfort food that’s so easy to make — that’s how we’d describe @kennie.cooks biltong carbonara.

Serves 4

Ingredients:

  • 2 packs of Ember Original Biltong 
  • 300g Bucatini pasta 
  • 3 Egg yolks
  • 1 Whole egg
  • 1 cup Parmesan, grated 
  • 1 cup reserved pasta water 
  • Salt & Pepper

Instructions:

  1. Cook your pasta in salted water according to pack instructions until fully cooked
  2. In the meantime, mix together your egg yolks, whole egg, Parmesan and black pepper in a large bowl
  3. Once the pasta is cooked, reserve 1 cup of pasta water and drain the rest 
  4. Add your pasta and biltong to the egg and Parmesan mixture and mix together, slowly incorporating your pasta water to form a creamy emulsion 
  5. Serve with extra Parmesan, black pepper, and biltong
