With these soaring temperatures we already feel like we could be in Italy right now so we thought why not put an Ember spin on a classic Italian dish to really get in the mood. This epic recipe was created by @chef_kelly_ using just a few simple ingredients and some Ember biltong of course!

Makes 8
Ingredients:
- Crispy bread
- 60g Ember Biltong
- 100-200g baby plum tomatoes
- 1/3 yellow pepper
- 1/2 red pepper
- 1/2 Red onion
- A small handful of chopped basil leaves
- A tablespoon of roughly chopped parsley
- Extra virgin olive oil
- Salt and pepper to taste
Instructions:
- Chop the tomatoes in half, finely slice the red onion and dice the peppers
- Add the tomatoes, red onion and peppers to a bowl
- Add a tablespoon of extra virgin olive oil, the chopped basil, parsley and salt and pepper to taste
- Mix together well
- Slice the bread into 8 and toast until lightly golden on each side
- Add a spoonful of the mixture to each toasted bread slice and garnish with Ember biltong and some roughly torn basil
