Biltong Bruschetta

With these soaring temperatures we already feel like we could be in Italy right now so we thought why not put an Ember spin on a classic Italian dish to really get in the mood. This epic recipe was created by @chef_kelly_ using just a few simple ingredients and some Ember biltong of course!

 

 

Prep time: 15 mins

Cooking Time: 5 mins

Makes 8 bruschetta

Ingredients:

  • Crispy bread
  • 60g Ember Biltong
  • 100-200g baby plum tomatoes
  • 1/3 yellow pepper
  • 1/2 red pepper
  • 1/2 Red onion
  • A small handful of basil leaves
  • A tablespoon of roughly chopped parsley
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Chop the tomatoes in half, finely slice the red onion and dice the peppers
  2. Add the tomatoes, red onion and peppers to a bowl
  3. Add a tablespoon of extra virgin olive oil, the chopped basil, parsley and salt and pepper to taste
  4. Mix together well
  5. Slice the bread into 8 and toast until lightly golden on each side
  6. Add a spoonful of the mixture to each toasted bread slice and garnish with Ember biltong and some roughly torn basil
