Veggie Tray Bake with Biltong

Cook time: 15 - 20 mins

Serves 2


  • 1 pack of Ember biltong
  • 1 head of broccoli, chopped
  • 80g brussel sprouts, chopped 
  • 1 red onion, sliced
  • 1 tin of black beans, drained
  • 3 cloves of garlic, crushed
  • Dash of salt & chilli flakes
  • 1 juice and zest of a lime
  • Drizzle of olive oil
  • 1 avocado, chopped
  • Handful of crushed peanuts


  1. Chop broccoli & brussel sprouts
  2. Pour boiling water on both of them in a bowl & leave for a minute
  3. Add the sliced red onions and tin of drained black beans to an oven tray
  4. Chuck in the broccoli and brussel sprouts
  5. Mix in salt, chilli flakes and 3 cloves of crushed garlic
  6. Roast for 15-20 mins. at 220°C
  7. Whilst cooking, mix the zest and juice of a lime with olive oil then drizzle on the veggies after roasting
  8. Top with chopped avocado, crushed peanuts, and Ember biltong
