Serves 2
Ingredients:
- 1 pack of Ember biltong
- 1 head of broccoli, chopped
- 80g brussel sprouts, chopped
- 1 red onion, sliced
- 1 tin of black beans, drained
- 3 cloves of garlic, crushed
- Dash of salt & chilli flakes
- 1 juice and zest of a lime
- Drizzle of olive oil
- 1 avocado, chopped
- Handful of crushed peanuts
Instructions:
- Chop broccoli & brussel sprouts
- Pour boiling water on both of them in a bowl & leave for a minute
- Add the sliced red onions and tin of drained black beans to an oven tray
- Chuck in the broccoli and brussel sprouts
- Mix in salt, chilli flakes and 3 cloves of crushed garlic
- Roast for 15-20 mins. at 220°C
- Whilst cooking, mix the zest and juice of a lime with olive oil then drizzle on the veggies after roasting
- Top with chopped avocado, crushed peanuts, and Ember biltong
