Biltong Breakfast Cups

A meal prep classic courtesy of Kasia Parfitt (@kasiasplate). She says, "They take less than 30 minutes to make and are high in protein as well as being super tasty. Just think of a 'grab and go' snack for busy mornings. You can make these with whatever filling you like. For this batch, I chose a chilli biltong and cheese combo. The biltong gave a lovely little kick and flavour too.""

Biltong Breakfast Cups

Prep time: 10 mins

Cook time: 20 mins

Makes 8

Ingredients:

  • 6 eggs
  • 1 pack of Ember Chilli Biltong
  • 1/2 red bell pepper, chopped
  • 1 tbsp mixed herbs
  • Salt and pepper to taste
  • 1/2 small onion, diced (optional)

Instructions:

  1. Beat the eggs in a bowl
  2. Add all the filling ingredients and mix well
  3. Pop into a greased or silicone muffin tray (half-fill as they rise a lot)
  4. Bake at 180°C for 20 minutes (until golden)
  5. Store in an air-tight container in the fridge for 3-5 days
