Mum's Ember Biltong Flan Recipe

Our Mum, Nicky, has a talent for making sure there is no waste in her kitchen. Here is her famous Ember biltong flan recipe. Home cooked food at it's best.

Nicky says "This is the perfect versatile dish for lunch because you can use such a variety of ingredients. It gives you the chance to use up any ingredients that are in the fridge and putting Ember biltong in there gives a nice protein lift to the recipe. It's a delicious, quick and easy meal that also helps to minimise any waste."

Prep time: 10 mins

Cooking Time: 25 mins

Serves 4-6

Ingredients:

  • 5 eggs
  • 150g Ember Biltong
  • 3 medium onions, finely chopped
  • Handful of peppers, finely chopped
  • Handful of mushrooms, finely chopped
  • Any other vegatables you have spare
  • 500ml Milk or cream
  • Grated cheese
  • Olive oil
  • Mixed herbs, chopped
  • Salt and Pepper

Instructions:

  1. Cook off the vegetables
  2. Layout the cooked vegetables as a base inside a 18cm round tray
  3. Sprinkle your Ember biltong on top the the layer of vegetables
  4. Whisk the eggs with the milk and some seasoning. Then add on top of the vegetables and biltong in the tray.
  5. Cook for 25 minutes at 180C
  6. Once cooked sprinkle with grated cheese and serve

Best served with new potatoes and salad. Enjoy!
