A massive fan of quick, healthy, lunchtime meals that isn’t boring? Well, here’s your new favourite weekday lunch by @piggieandporkie made with Ember Biltong for some nice chilli flavour and a big hit of protein. She says, “It’s like a combo of some of my fave takeaway meals but in a healthy and super quick way. It requires zero cooking and is super light and refreshing which is perfect for now that the weather is getting nicer.”

Serves 1
Ingredients:
28g Chilli Biltong
1 tbsp Peanut butter
1 tsp Soy sauce
1 tbsp Sesame oil
Mixed greens (measurements to your liking)
Spring onions, chopped (measurements to your liking)
Radishes, sliced (measurements to your liking)
Instructions:
For the satay sauce, mix the peanut butter with soy sauce and add the sesame oil.
Slowly add a bit of water until you get a mixture you can drizzle.
Add the chopped spring onions and sliced radishes to your mixed greens (store bought is fine)
Drizzle with satay sauce and top with Ember Chilli biltong
