This Biltong Shakshuka recipe by Natasha Lesley (@thecoachhousekitchen) isn't only super high in protein, healthy and delicious, it's also so easy to make—cooked and served on the same pan (the easy clean up is just another bonus).

Serves 2
Ingredients:
1 onion, chopped
1 red pepper, chopped
1 red chilli, deseeded & chopped
2 cloves of garlic, chopped
1 tsp ground cumin
1 tsp paprika
1 tsp cayenne pepper
2 tbsp tomato paste
2 cans chopped tomatoes
2 packs Ember biltong
4 eggs
Feta
Fresh coriander
Salt & Pepper
Instructions:
Melt the oil over a medium to high heat, once it is hot, add the chopped onion and pepper and cook for 5 minutes until they begin to soften
Add in the chopped garlic, chopped chilli, tomato paste and other spices and continue to stir-fry for 2 minutes
Stir in the chopped tomatoes, season with salt and pepper and leave the Shakshuka to simmer for 10 minutes
Chop the biltong and stir it into the shakshuka
With a spoon, make a small indent into the mixture and crack an egg into each one
Place a lid on top of the pan and cook for 7 minutes to poach, or until the eggs are cooked to your liking. Alternatively, you can bake your eggs in the oven
To finish, sprinkle with freshly chopped coriander and feta cheese
